Chef Wes Ellis hopes to open the Packet House Grill on Sept. 8 in the historic Packet House in Little Rock.
The 1869 home at 1406 Cantrell Road has served as a residence, apartments, offices and a restaurant throughout its 143 years and will provide both restaurant and office spaces once again after renovations conclude there this month.
The final work will wrap up at least $1 million in renovations, he said.
Betty Richards, CEO of trucking company Rich Logistics in Little Rock, owns the Packet House and will use the building’s third floor for offices.
About 8,500 SF of the home’s 10,800 SF will house the restaurant, which Ellis will own and operate.
The first floor of the restaurant will seat 130 people, and the second, which will be available for private dining and banquets, will seat up to 80.
At the restaurant, Ellis will offer Southern favorites like shrimp and grits, but “do something different with it,” he said.
Ellis currently makes and sells barbecue sauce and salsa under the brand Wesley’s Mojo.
Ellis’ Arkansas restaurant experience comes from stints at Trio’s and Markham 227 in Little Rock.
