Do you know who’s going to be the director of food and beverage for the new Saracen Casino Resort in Pine Bluff?

Todd R. Gold, who became associate dean of the Culinary Arts & Hospitality Management Institute at the University of Arkansas-Pulaski Technical College in 2006. His resume also includes owning the Purple Cow restaurants from 2007-12.

The Saracen will feature seven restaurants, a brewery, convention center and over 300 hotel rooms, Gold said in an email to Whispers.

“There are many cool things you can only find with us,” he said. “For instance, our beef and bison are pasture-to-plate. We have our own coffee roasting company, greenhouses and much more.”

The Quapaw Tribe hopes to open its casino to the public by late September. Of course, the Saracen Annex is already open.

“I have already assembled what will be the best culinary and hospitality team arguably anywhere, but without doubt in the state of Arkansas,” Gold said. “Soon, Arkansas and many from surrounding states will be headed to Pine Bluff for a culinary and hospitality experience that will be second to none, and of course they will enjoy all of the gaming options and many other amenities as well.”

Gold said he’ll still be a part of the school. He will be a part-time faculty member and chairman of the advisory board for the Culinary Arts & Hospitality Management Institute. He also plans to return to the school on April 22, for Diamond Chef Arkansas, an event he co-founded that has local chefs competing against each other.

“The culinary school will continue to be a tremendous asset to our state, while the new Saracen Casino Resort will open as THE culinary and hospitality destination,” Gold wrote. “Great things are coming!”
