The original Purple Cow restaurant, at 8026 Cantrell Road in Little Rock, which was heavily damaged by last year’s tornado, will be rebuilt and remodeled to make way for a new Purple Cow.
That’s the word from Ken Vaughan, president of the Purple Cow chain.
A $1 million building permit has been sought from the city, and Vaughan said the chain has submitted plans.
The Dave Grundfest Co. of Little Rock is the contractor for the project, and Vaughan said late last month that he expected a project timeline soon.
The chain has four locations — five, once the Cantrell Road site reopens — and was founded in 1989 when businessman Ed Moore and Chef Paul Bash opened the first Purple Cow, modeled after classic 1950s diners, on Cantrell.
